Disinfection of fruit and vegetable storage facilities, mould removal

Food industry faces a problem how to prolong freshness and quality of production and extend its shelf life without using chemicals. Ozone could be one of the options. During the storage of fruits, vegetables, and berries in storage facilities (warehouses, refrigerators, vehicles), mould formation is common occurrence. Therefore, main goals of the use of ozone with respect to fruits and vegetables are as follows:

  • elimination of pathogens and spoilage microorganisms;
  • slowdown of ripening process;
  • destruction of pesticides and chemicals.

In processes involving fruits and vegetables, ozone is used for both cleaning and disinfection of surfaces (packaging, transportation, processing) and the entire fruit or vegetable. Processing of products using ozone prior to packaging helps reduce the amount of bacteria, controls pathogens and extends shelf life of products. Ozone processing is safe for both prepared products, products that still need additional preparation and especially raw consumable products. If grown products (e.g., potato) are ozone treated, product rotting problem is reduced.
