Ozone can be dissolved in the water used to produce ice. The advantages of using such water are as follows:

  • Extended shelf life of frozen fish;
  • Improved product appearance.
  • The use of ozone in the production of ice is not a new concept, as this technology has been used in France since 1936. Studies have shown that the shelf life of fresh fish, seafood, or meat products kept in ozonized ice increases by >33%.
  • Ozone is dissolved in water, and the water can be used for washing various products or raw materials.
  • Studies have shown that this helps to significantly reduce bacteriological pollution (Sopher, et al, 2014, Ozone Applications in Catfish Processing).
  • Counting the number of colony-forming bacteria after product washing with ozonized water shows a significant decrease in colonies.

The advantages of using ozone for the disinfection of circulation water:

  • Ozone is more effective than chlorine in destroying viruses and bacteria (e.g., E. coli - up to 3000 times faster compared to Cl);
  • The ozonation process requires a short contact time (5 minutes, 4 mgO3/l=E. coli reduction by 2.5 log units);
  • There are no harmful residues to dispose of, unlike chlorination;
  • The additional removal of micro pollutants.
